Chef De Cuisine

Reports To

VP/Regional General Manager


The Chef De Cuisine will coach, train and supervise associates in the kitchen to prepare, cook and present food according to standard recipes. They will develop signature menus and signature dishes as required while ensuring excellent food quality and presentation of all food to our customers. The Chef De Cuisine will lead with passion and by example while effectively communicating and connecting with team members and guests alike.

Job Duties

  • Plan and direct food preparation and culinary activities
  • Train and develop team members and implement training programs
  • Manage production in main kitchen
  • Maintain all menus and recipes used in the restaurants
  • Menu costing, menu concept and menu design experience is required
  • Perform administrative duties including ordering, scheduling and invoice coding
  • Ensure Culinary team complies with all Provincial sanitation & food safety standards and regulations
  • Manage schedules and complete payroll records
  • Execute BEO and banquet functions including internal player
  • Expertise in food product, presentation, quality and preparation
  • Ability to maintain food and labour costs in accordance with budget
  • Staff performance management and evaluations
  • Investigate and resolve customer complaints
  • Give prepared plates the “final touch”
  • Other duties as assigned


  • Minimum of 5 years of Kitchen Management/Sous or Head Chef experience
  • Education in Culinary Arts is preferred but a combination of relevant experience and training will be considered
  • Excellent record of kitchen management
  • Keep up with cooking trends and best practices
  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS, inventory control)
  • Must be able to handle a physical work load
  • Must be able to work varied shifts which would include weekends and holidays
  • Strong management skills in a multicultural and dynamic environment
  • Very strong communication, problem solving, decision making, and interpersonal skills
  • Superior customer service, teambuilding, and conflict resolution skills

Work Conditions

  • Must be able to lift a maximum of 25-50 lbs. using proper lifting techniques
  • Must be able to stand for 8-10 hour periods
  • Operate hot cooking equipment
  • Bending, lifting, kneeling etc.
  • Must be able to carry out light cleaning duties
  • Must be available to work all shifts including evenings, weekends and holidays
  • Must be able to work in a fast-paced working environment
  • Manual dexterity, preparing vegetables, meat and other food items
